So for some reason I couldn't stop cooking last night. I have never made hummus before but I had a taste for it so I thought I'd try. I found a bunch of good recipes on the web, and mixed and matched until I came up with one I liked. Here is it.
4 tsp. minced garlic
2 15-oz cans of garbanzo beans (chickpeas), drained and rinsed
1/3 cup lemon juice
1/2 cup water
1/4 cup olive oil
1/2 teaspoon of salt
Combine all ingredients in food processor and blitz until smooth.
I am having it for lunch today with some feta cheese, green olives, and carrot sticks.
